The Copper’s job is not just to boil the sweet wort with hops. Many different reactions occur during this stage of the brew, it will influence clarity, colour, flavour, aroma, palate, P.H., boiling off excess liquor, sterilizing the wort etc… Just to mention a few.
Here are three views of our new copper. We started using this combined “Copper, Hop Back” in 1993. To add hops & gain access for cleaning there is a screw down lid at the top, and a false floor to strain our whole flower hops. The heat source is three X 18 kw electric heaters, and it has a rather natty steam condenser on top.
